- 24 caramel squares
- 24 round vanilla wafer cookies
- 2 cups semi-sweet chocolate chips
Instructions
- Preheat the oven to 250°F. Arrange the unwrapped caramels on a parchment-lined baking sheet and soften in the oven for 5 minutes.
- While the caramels soften, place the vanilla wafer cookies bottom-side up on another parchment-lined pan that fits in your freezer.
- After softening, flatten each caramel into a circle and place it on top of each cookie.
- Flash freeze the assembled bites for 15 minutes.
- Melt 1 cup of chocolate chips in a microwave-safe bowl at 30-second intervals, stirring until smooth.
- Coat each bite in melted chocolate using a fork, letting excess drip back into the bowl before placing them back on parchment paper.
- Repeat the melting process with the remaining chocolate chips and freeze again if necessary until set.
