Ingredients
- 60 ml milk
- 120 ml water
- 21 g active dry yeast
- 50 g sugar
- 550 g Manitoba or bread flour
- 2 eggs
- 1 egg yolk
- 5 g salt
- 70 g unsalted butter
- Vegetable oil (for frying)
- Chocolate spread or apricot jam (for filling)
- Sugar for coating
Instructions
- Prepare the yeast mixture by combining lukewarm milk, water, yeast, and sugar. Let it sit for about 10 minutes until bubbly.
- In a stand mixer, combine flour, eggs, egg yolk, salt, and the yeast mixture. Knead until elastic then add butter and knead until fully incorporated.
- Cover and let the dough rise at room temperature until it doubles in size (1 to 1.5 hours).
- Roll out the dough and cut into heart shapes using a cookie cutter. Allow them to rise again for an hour.
- Heat vegetable oil in a frying pan and fry the doughnuts until golden brown on both sides.
- Coat warm doughnuts in sugar before filling them with your desired filling.
