  • 120 ml water
  • 21 g active dry yeast
  • 50 g sugar
  • 550 g Manitoba or bread flour
  • 2 eggs
  • 1 egg yolk
  • 5 g salt
  • 70 g unsalted butter
  • Vegetable oil (for frying)
  • Chocolate spread or apricot jam (for filling)
  • Sugar for coating

Instructions

  1. Prepare the yeast mixture by combining lukewarm milk, water, yeast, and sugar. Let it sit for about 10 minutes until bubbly.
  2. In a stand mixer, combine flour, eggs, egg yolk, salt, and the yeast mixture. Knead until elastic then add butter and knead until fully incorporated.
  3. Cover and let the dough rise at room temperature until it doubles in size (1 to 1.5 hours).
  4. Roll out the dough and cut into heart shapes using a cookie cutter. Allow them to rise again for an hour.
  5. Heat vegetable oil in a frying pan and fry the doughnuts until golden brown on both sides.
  6. Coat warm doughnuts in sugar before filling them with your desired filling.
