- 1 cup rolled oats
- 1 large apple, peeled and chopped
- 3 tablespoons honey
- 2 large eggs
- 3 tablespoons plain yogurt
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon

- 1/2 teaspoon baking powder
- 1 tablespoon unsalted butter or coconut oil
Instructions
- Preheat your oven to 350°F (180°C).
- In a blender or mixing bowl, combine rolled oats (reserve 1/4 cup), chopped apple, honey, eggs, yogurt, vanilla extract, cinnamon, baking soda, baking powder, and butter or coconut oil. Blend until smooth.
- Fold in the reserved oats to retain texture.
- Line a small baking pan with parchment paper and pour in the batter.
- Bake for 20 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before slicing.
