- 1 ½ cups oats

- 1 ½ cups ripe bananas (mashed, about 3-4 bananas)
- Topping: ½ cup oats (old fashioned oats), ¼ teaspoon cinnamon, 2 Tablespoons brown sugar, 2 Tablespoons plant-based butter
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine oats, flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the egg and mix in oil and vanilla.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in the mashed bananas gently until incorporated.
- Divide the batter into a prepared muffin tin.
- For the topping, mix oats, cinnamon, brown sugar, and melted plant-based butter; sprinkle over each muffin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
