- 4 ripe bananas, mashed

- 1 tablespoon vanilla extract

- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 2 tablespoons unsalted butter (or applesauce)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a standard 9×5-inch loaf pan and line with parchment paper.
- In a mixing bowl, mash the bananas until smooth.
- Add the egg, vanilla extract, sugars, and cinnamon; stir until well combined.
- In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Gently fold in melted butter (or applesauce) until incorporated.
- Pour the batter into the prepared loaf pan and bake for 35-45 minutes, or until a toothpick comes out clean.
- Allow to cool in the pan for 5-10 minutes before transferring to a wire rack.
