  • 1 tsp Vanilla Extract
  • 2 1/2 cups Guava Nectar or Tropical Juice (for glaze)
  • 1/2 cup Granulated Sugar (for glaze)
  • 2 tbsp Cornstarch
  • 1/4 cup Water (for slurry)
  • 8 oz Cool Whip (thawed)
  • 1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine Strawberry Cake Mix, guava nectar, and eggs.
  3. Add melted coconut oil, cream cheese, granulated sugar, and vanilla extract; mix until smooth.
  4. Pour batter into a greased 9×13 inch baking pan and bake for about 30 minutes until a toothpick comes out clean.
  5. For the glaze, simmer guava nectar and sugar in a saucepan; thicken with cornstarch slurry before removing from heat.
  6. Once cooled, pour glaze over the cake and top with Cool Whip and coconut flakes before serving.
