Ingredients
- 6 skin-on, bone-in chicken thighs
- Juice of 2 fresh lemons
- Zest of 1 lemon
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup chicken broth or water
Instructions
- In a large bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, oregano, salt, and pepper.
- Add chicken thighs to the marinade and coat thoroughly. Cover and refrigerate for at least 30 minutes or overnight for maximum flavor.
- Preheat your oven to 425°F (220°C).
- Heat a skillet over medium-high heat; add olive oil and sear chicken thighs skin-side down for about 3–4 minutes until golden brown.
- Transfer chicken to a baking dish with any remaining marinade and pour chicken broth or water around it. Bake for 20–25 minutes until internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before serving.
