Instructions

  1. In a large bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, oregano, salt, and pepper.
  2. Add chicken thighs to the marinade and coat thoroughly. Cover and refrigerate for at least 30 minutes or overnight for maximum flavor.
  3. Preheat your oven to 425°F (220°C).
  4. Heat a skillet over medium-high heat; add olive oil and sear chicken thighs skin-side down for about 3–4 minutes until golden brown.
  5. Transfer chicken to a baking dish with any remaining marinade and pour chicken broth or water around it. Bake for 20–25 minutes until internal temperature reaches 165°F (75°C).
