Ingredients
- 1 box of puff pastry dough (2 sheets), thawed
- 1 8-ounce block of cream cheese
- 1 tablespoon sour cream
- 3 tablespoons granulated sugar
- 2 teaspoons lime juice, freshly squeezed or bottled
- Lime zest from one whole lime
- 2-1/2 teaspoons vanilla extract
- Fresh blueberries, rinsed and dried
- Fresh strawberries, stems removed and cut in half
- 3 tablespoons melted butter, for brushing
- Sanding sugar
Instructions
- Preheat your oven to 400°F (200°C) and prepare baking sheets lined with silicone mats or parchment paper.
- Roll out thawed puff pastry, cut into rounds, and score lightly around the edges.
- In a stand mixer, blend cream cheese, sour cream, sugar, lime juice, zest, and vanilla until smooth.
- Place two tablespoons of filling on each pastry round; top half with blueberries and the other half with strawberries.
- Brush edges with melted butter before baking for 15-16 minutes until golden.
- Let cool before serving.
