Ingredients
- 1 stick unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons coffee extract (or 1 tablespoon instant coffee)
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 1/2 teaspoon instant coffee granules
- 2-4 tablespoon heavy whipping cream
- 1/3 cup unsalted butter
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8-inch baking dish with non-stick spray or parchment paper.
- Melt 1 stick of unsalted butter in a microwave-safe bowl.
- In a large mixing bowl, combine melted butter, sugar, eggs, and vanilla extract until mixed well.
- In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually add the dry mixture to the wet ingredients until just combined.
- Spread the batter evenly in the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Let the brownies cool completely before preparing the frosting by mixing instant coffee granules with heavy cream and beating with unsalted butter and powdered sugar until smooth.
- Frost the cooled brownies generously and enjoy!
