  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons coffee extract (or 1 tablespoon instant coffee)
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 1/2 teaspoon instant coffee granules
  • 2-4 tablespoon heavy whipping cream
  • 1/3 cup unsalted butter
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8-inch baking dish with non-stick spray or parchment paper.
  2. Melt 1 stick of unsalted butter in a microwave-safe bowl.
  3. In a large mixing bowl, combine melted butter, sugar, eggs, and vanilla extract until mixed well.
  4. In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually add the dry mixture to the wet ingredients until just combined.
  5. Spread the batter evenly in the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let the brownies cool completely before preparing the frosting by mixing instant coffee granules with heavy cream and beating with unsalted butter and powdered sugar until smooth.
  7. Frost the cooled brownies generously and enjoy!
