Ingredients
- 2 large eggs
- 2 tablespoons milk
- ½ teaspoon vanilla extract
- ¼ cup all-purpose flour
- ¼ teaspoon baking powder
- ½ teaspoon white vinegar or lemon juice
- 2 tablespoons granulated sugar
- Neutral oil (for greasing)
Instructions
- Separate egg whites from yolks into two bowls.
- In the yolk bowl, mix in milk, vanilla extract, flour, baking powder, and sugar until smooth.
- Whip egg whites to stiff peaks in a separate bowl.
- Gently fold half of the whipped whites into the yolk mixture; then fold in remaining whites until just combined.
- Heat a nonstick skillet over low heat; grease lightly.
- Pour about ¼ cup of batter into molds on the skillet.
- Cover and cook for 6-7 minutes per side until golden brown.
