Ingredients
- 2 medium-sized oranges
- 200 grams granulated sugar
- 200 grams almond meal
- 100 grams shelled pistachios, finely ground
- 6 large eggs
- 1 tsp baking powder
- A pinch of salt
Instructions
- Prepare the Oranges: Boil washed oranges in water for about 30 minutes until soft, then let cool.
- Blend: Cut oranges in half, remove seeds, and blend into a smooth puree using a food processor.
- Mix Ingredients: In the processor, combine sugar, almond meal, ground pistachios, baking powder, and salt; blend until well combined.
- Whisk Eggs: In a large bowl, whisk eggs until frothy and mix in the orange-nut mixture until smooth.
- Preheat Oven: Preheat oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
- Bake: Pour batter into prepared pan; bake for 45-50 minutes or until golden and toothpick comes out clean.
- Cool & Serve: Let cool for 10 minutes in the pan before transferring to a wire rack. Dust with powdered sugar and garnish with crushed pistachios before serving.
