  • 1 cup powdered sugar (for icing)
  • 3-4 tbsp milk (for icing)
  • A few drops of green food color

Instructions

  1. Prepare croissants as per your preferred method.
  2. Blanch the pistachios in boiling water for 2 minutes, then peel and blend into a paste using a food processor.
  3. In a saucepan, heat milk and vanilla until just boiling. In a bowl, whisk together egg, sugar, salt, and cornstarch. Gradually add hot milk while mixing.
  4. Combine the egg mixture with the remaining milk in the saucepan and cook on low heat until thickened into custard.
  5. Stir in butter and pistachio paste; blend until smooth, strain, cover, and refrigerate.
  6. For icing, mix powdered sugar with milk and a few drops of food color to achieve desired consistency.
  7. Fill croissants with chilled custard using a piping bag.
  8. Drizzle icing over filled croissants and top with chopped pistachios.
