- 1/2 cup unshelled pistachios
- 1 egg
- 1/4 cup sugar
- 2 tbsp cornstarch
- 1 cup milk
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 tbsp unsalted butter
- 2 tbsp pistachio paste
- 1 cup powdered sugar (for icing)
- 3-4 tbsp milk (for icing)
- A few drops of green food color
Instructions
- Prepare croissants as per your preferred method.
- Blanch the pistachios in boiling water for 2 minutes, then peel and blend into a paste using a food processor.
- In a saucepan, heat milk and vanilla until just boiling. In a bowl, whisk together egg, sugar, salt, and cornstarch. Gradually add hot milk while mixing.
- Combine the egg mixture with the remaining milk in the saucepan and cook on low heat until thickened into custard.
- Stir in butter and pistachio paste; blend until smooth, strain, cover, and refrigerate.
- For icing, mix powdered sugar with milk and a few drops of food color to achieve desired consistency.
- Fill croissants with chilled custard using a piping bag.
- Drizzle icing over filled croissants and top with chopped pistachios.
