Ingredients
- 2 cups sugar
- 1 cup softened butter
- 1 ½ teaspoons pure vanilla extract
- 3 large eggs
- 2 ½ cups cake flour
- 1 cup sifted baking cocoa
- 2 teaspoons baking soda
- ½ teaspoon salt
- ½ cup instant chocolate pudding mix
- 2 ¼ cups buttermilk
- 1 cup semi-sweet chocolate chips
- ½ cup water
- ½ cup butter
- 1 teaspoon vanilla extract
- 1 cup sifted baking cocoa
- 3 ½ cups powdered sugar
- 3 tablespoons heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat together the sugar and softened butter until creamy. Add vanilla extract and eggs; mix well.
- In another bowl, whisk together cake flour, sifted cocoa powder, baking soda, salt, and pudding mix. Gradually add to the wet mixture alternating with buttermilk until smooth.
- Pour batter into greased baking pans and bake for about 60 minutes or until a toothpick comes out clean.
- For the ganache icing, melt chocolate chips, water, and butter over low heat. Stir in vanilla extract and sifted cocoa powder before gradually adding powdered sugar.
- Once cooled, assemble the cake with layers of ganache icing in between.
