- 12 slices thinly sliced beef
- 1 pack enoki mushrooms (split into 12 pieces)
- 1/2 small yellow onion (sliced)
- 2 large eggs
- 1 cup dashi broth
- 2 tablespoons vinegar
- 3 tablespoons soy sauce
- 1/2 tablespoon sugar
- 1/4 teaspoon black pepper
- Green onion (for garnish)
- Sesame seeds (for garnish)
Instructions
- Prep the enoki mushrooms by dividing them into small bunches. Roll each bunch with one slice of beef, ensuring they are tightly wrapped.
- In a mixing bowl, combine the dashi broth, vinegar, soy sauce, sugar, and black pepper. Stir until well mixed.
- Heat olive oil in a skillet over medium heat and cook the sliced onions until slightly browned and translucent (about 3-5 minutes).
- Place the rolled enoki beef in a single layer on top of the onions and drizzle the sauce over them. Cover and cook for about 3 minutes before carefully flipping each roll and cooking for another 1-2 minutes.
- Scramble the eggs in a bowl and pour over the cooking rolls. Simmer until fully cooked through (around 2 minutes).
- Garnish with diced green onion and sesame seeds before serving warm alongside steamed rice.
