  • 2 large eggs
  • 1 cup dashi broth
  • 2 tablespoons vinegar
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper
  • Green onion (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prep the enoki mushrooms by dividing them into small bunches. Roll each bunch with one slice of beef, ensuring they are tightly wrapped.
  2. In a mixing bowl, combine the dashi broth, vinegar, soy sauce, sugar, and black pepper. Stir until well mixed.
  3. Heat olive oil in a skillet over medium heat and cook the sliced onions until slightly browned and translucent (about 3-5 minutes).
  4. Place the rolled enoki beef in a single layer on top of the onions and drizzle the sauce over them. Cover and cook for about 3 minutes before carefully flipping each roll and cooking for another 1-2 minutes.
  5. Scramble the eggs in a bowl and pour over the cooking rolls. Simmer until fully cooked through (around 2 minutes).
  6. Garnish with diced green onion and sesame seeds before serving warm alongside steamed rice.
