- 1 1/2 pounds strawberries (quartered or diced)
- 1/3 cup granulated sugar
- 2 tablespoons fresh lemon juice
- 2 teaspoons cornstarch
- 1/2 teaspoon vanilla extract
- Pinch of kosher salt
Instructions
- Slice the strawberries and set aside one-third.
- In a saucepan, combine two-thirds of the strawberries with sugar.
- Mix lemon juice, cornstarch, vanilla extract, and salt in a bowl until smooth; add to the saucepan.
- Stir over medium heat until boiling. Reduce heat and simmer for 4-5 minutes until thickened.
- Remove from heat and stir in the remaining strawberries.
- Cool before transferring to an airtight container; refrigerate.
