- 2 cups fresh ripe strawberries
- 8 cups mixed salad greens (a blend of spinach and lettuce)
- 1/2 red onion, sliced
- 1/3 cup pecan pieces or chopped walnuts or sliced almonds
- 1/3 cup crumbled feta cheese
- 2 tablespoons aged balsamic vinegar
- 2 tablespoons dijon mustard
- 2 tablespoons maple syrup or honey
- 1/4 teaspoon kosher salt
- 6 tablespoons olive oil
- Freshly ground black pepper
Instructions
- Wash strawberries, remove stems, and slice.
- In a mixing bowl, combine mixed greens, sliced strawberries, and red onion.
- Add nuts and crumbled feta cheese on top.
- For the vinaigrette, whisk together balsamic vinegar, dijon mustard, maple syrup (or honey), salt, and olive oil until smooth.
- Drizzle dressing over the salad and toss gently to coat.
- Season with freshly ground black pepper if desired and serve immediately.
