Ingredients
- 8 large store-bought croissants
- 1 cup shelled pistachios (unsalted)
- 1/4 cup powdered sugar
- 2 tablespoons butter (softened)
- 1 teaspoon vanilla extract
- Pinch of salt
- 4 ounces dark chocolate
- 2 tablespoons butter (for chocolate mixture)
- Chopped pistachios (for garnish)
- Additional powdered sugar for dusting
Instructions
- Prepare the pistachio filling by blending shelled pistachios in a food processor until finely ground. Mix in powdered sugar, softened butter, vanilla extract, and salt until smooth. Chill for 15 minutes.
- Melt the dark chocolate with 2 tablespoons of butter in a microwave-safe bowl.
- Preheat your oven to 350°F (175°C).
- Slice each croissant horizontally and spread chilled pistachio filling inside. Drizzle melted chocolate over the filling and close each croissant.
- Place on a parchment-lined baking sheet and brush tops with beaten egg if desired. Bake for 5–7 minutes until warmed through.
- Garnish with additional melted chocolate, chopped pistachios, and powdered sugar before serving.
