  • 1 cup shelled pistachios (unsalted)
  • 1/4 cup powdered sugar
  • 2 tablespoons butter (softened)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 ounces dark chocolate
  • 2 tablespoons butter (for chocolate mixture)
  • Chopped pistachios (for garnish)
  • Additional powdered sugar for dusting

Instructions

  1. Prepare the pistachio filling by blending shelled pistachios in a food processor until finely ground. Mix in powdered sugar, softened butter, vanilla extract, and salt until smooth. Chill for 15 minutes.
  2. Melt the dark chocolate with 2 tablespoons of butter in a microwave-safe bowl.
  3. Preheat your oven to 350°F (175°C).
  4. Slice each croissant horizontally and spread chilled pistachio filling inside. Drizzle melted chocolate over the filling and close each croissant.
  5. Place on a parchment-lined baking sheet and brush tops with beaten egg if desired. Bake for 5–7 minutes until warmed through.
