Instructions
- Wash oranges thoroughly and peel them carefully with a sharp knife, avoiding the white pith.
- Slice peels into thin strips about 1/4 inch wide.
- Blanch the peels by boiling them in cold water for 10 minutes; drain and repeat this process 2-3 times to reduce bitterness.
- In a pot, combine 1 cup water and 1 cup sugar; bring to a gentle boil until dissolved.
- Add boiled peels to the syrup; cook over low heat for about 45 minutes until translucent and glossy.
- Transfer peels onto a cooling rack lined with parchment paper to dry for several hours.
