  • 20 oz canned pineapple chunks

  • 1 cup chicken broth
  • 2 cups cooked rice

Instructions

  4. In a bowl, whisk together reserved pineapple juice, soy sauce, brown sugar, cornstarch, and chicken broth.
  5. Pour the sauce into the skillet with vegetables; simmer until thickened.
  6. Return chicken and add pineapple chunks; stir to combine.
  7. Serve over cooked rice, garnished with green onions if desired.
