Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter, honey, and vanilla extract until smooth.
- Add the egg and mix well until fully incorporated.
- In a separate bowl, combine flour, quick oats, baking powder, baking soda, and salt.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Fold in sweetened shredded coconut.
- Scoop tablespoon-sized amounts of dough onto a lined baking sheet, leaving space between each cookie.
- Bake for about 8 minutes or until golden brown around the edges.
- Allow cookies to cool on a wire rack before enjoying.
