Ingredients

  • 50 g Sugar (or coconut sugar)
  • 10 g Salt
  • 25 g Fresh Yeast (or active dry yeast)
  • 3 medium Eggs (or flax eggs for vegan)
  • 100 g Unsalted Butter (or vegan butter)
  • 500 ml Whole Milk (or almond/soy milk)
  • 1 whole Vanilla Pod (or 1 teaspoon vanilla extract)
  • 4 large Egg Yolks (or cornstarch for egg-free custard)
  • 30 g Cornstarch (optional)
  • 100 g Mini Chocolate Chips

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt. Dissolve the yeast in lukewarm milk and mix with dry ingredients along with eggs. Knead in butter until smooth.
  2. Cover the dough and let it rise in a warm place until doubled in size (about 1 hour).
  3. For the custard filling, heat milk with half the sugar and vanilla pod seeds until simmering. In another bowl, whisk remaining sugar, egg yolks, and cornstarch; temper with hot milk before thickening on medium heat.
  4. Preheat the oven to 180°C (350°F). Roll out dough into circles, fill with custard and chocolate chips, then fold over.
  5. Bake on lined sheets for about 12 minutes until golden brown.
