  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber (or 3 Persian cucumbers), thinly sliced
  • 2 tbsp chopped fresh mint or basil
  • 1 tbsp fresh lemon juice or balsamic vinegar
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Optional: 1/4 cup crumbled feta or goat cheese
  • Optional: 2 tbsp slivered almonds or sunflower seeds

Instructions

  1. Wash and dry the strawberries and cucumbers. Hull and slice the strawberries; thinly slice the cucumbers into rounds.
  2. In a small bowl or jar, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning as needed.
  3. In a large mixing bowl, combine sliced cucumbers, strawberries, herbs, and cheese if desired.
  4. Drizzle half of the dressing over the salad and gently toss to coat without crushing the fruit.
  5. Transfer to a serving platter and garnish with nuts/seeds and additional herbs if desired. Drizzle with remaining dressing before serving.
