Ingredients
- 1 cup strawberries, hulled and sliced
- 1 large English cucumber (or 3 Persian cucumbers), thinly sliced
- 2 tbsp chopped fresh mint or basil
- 1 tbsp fresh lemon juice or balsamic vinegar
- 2 tbsp olive oil
- Salt and black pepper, to taste
- Optional: 1/4 cup crumbled feta or goat cheese
- Optional: 2 tbsp slivered almonds or sunflower seeds
Instructions
- Wash and dry the strawberries and cucumbers. Hull and slice the strawberries; thinly slice the cucumbers into rounds.
- In a small bowl or jar, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning as needed.
- In a large mixing bowl, combine sliced cucumbers, strawberries, herbs, and cheese if desired.
- Drizzle half of the dressing over the salad and gently toss to coat without crushing the fruit.
- Transfer to a serving platter and garnish with nuts/seeds and additional herbs if desired. Drizzle with remaining dressing before serving.
