- 12 slices white bread
- 1 English cucumber
- 8 ounces cream cheese (softened)
- 1/4 cup mayo
- 2 tablespoons fresh dill (minced)
- 1 tablespoon lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- Fresh pepper (to taste)
Instructions
- In a mixing bowl, combine softened cream cheese, mayo, dill, lemon juice, garlic powder, and salt. Mix until smooth.
- Peel the cucumber in stripes and slice it into 1/8-inch thick rounds using a mandoline or sharp knife.
- Cut the crusts off the bread if desired and spread about 1 tablespoon of the cream cheese filling on each slice.
- Layer cucumber slices on top, season with fresh cracked pepper and additional dill if desired, then place another piece of bread on top and cut into triangles or squares.
