Ingredients
- 1 tablespoon olive oil
- 1 pound chicken or turkey sausage alternative
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced (russet or Yukon gold)
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme or Italian seasoning
Instructions
- Heat olive oil in a skillet over medium heat. Add the meat alternative and brown until cooked through. Drain excess fat.
- Sauté diced onion in the same skillet until softened, then add minced garlic and cook briefly.
- Transfer the meat mixture to your crockpot along with diced potatoes, chicken broth, salt, pepper, and thyme.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until potatoes are tender.
- Stir in heavy cream before serving; allow to warm without boiling.
