Instructions

  2. Knead the dough on a floured surface until smooth and elastic (8-10 minutes).
  3. Place the dough in an oiled bowl, cover, and let rise until doubled (about 1 hour).
  4. Prepare the cold butter block into a square (7×7 inches). Keep it chilled until ready.
  5. Roll out the risen dough into a square (14×14 inches) and place the chilled butter in the center. Fold corners over to enclose.
  6. Roll into a rectangle (20×10 inches), fold like a letter, wrap, and chill for 30 minutes. Repeat twice more.
  7. Roll final dough into a rectangle (20×12 inches) and cut into triangles (5 inches wide). Roll from base to tip to form croissants.
  8. Place shaped croissants on parchment-lined baking sheets, cover, and proof for about 1-1.5 hours until puffy.
  9. Preheat oven to 400°F (200°C), brush with beaten egg, then bake for about 15-18 minutes until golden.
