Ingredients
- 2 lbs chicken breast, cut into strips
- 1 white onion, diced
- ½ cup chicken stock
- ½ cup roasted red peppers, sliced
- 1 cup heavy cream
- ½ cup Parmesan cheese, shredded
- ½ cup pepperoncini peppers
- 2 tbsp butter
- 1 tsp sea salt
- 1 tsp ground pepper
- 2 tbsp garlic, diced
- 1 tbsp Italian seasoning
Instructions
- Season the chicken strips with sea salt and pepper.
- Melt butter in a large skillet over medium-high heat. Cook seasoned chicken until browned; set aside.
- In the same skillet, sauté diced onions and garlic until golden brown.
- Add chicken stock and roasted red peppers; reduce by half.
- Stir in heavy cream and Parmesan until smooth.
- Add Italian seasoning and pepperoncini; mix well.
- Return chicken to the skillet and simmer until cooked through and sauce thickens.
- Serve hot over rice, pasta, or vegetables.
