Instructions
- Blend the base ingredients: In a high-speed blender or food processor, combine cottage cheese, peanut butter, sweetener, vanilla extract, and salt. Blend for 30–60 seconds until smooth.
- Adjust texture: If too thick, add 1–2 tablespoons of milk or cream and blend again.
- Chill the mousse: Transfer to a bowl and refrigerate for 15–20 minutes.
- Melt chocolate topping: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in 20-second intervals until melted and smooth.
- Serve: Spoon mousse into bowls, drizzle with melted chocolate, and garnish with chopped peanuts.
