  • 250 g flour for yeast dough
  • 110 g whole milk
  • 1 egg
  • 50 g sugar
  • 1 pinch of salt
  • 20 g butter
  • 3 g dry yeast (or 9 g fresh yeast)
  • 1 tablespoon orange marmalade
  • 1 teaspoon vanilla extract
  • 80 g butter (for finishing)
  • Egg wash: 1 beaten egg with a tablespoon of cream or milk
  • Granulated sugar (for sprinkling)

Instructions

  1. In a mixing bowl, combine flour and yeast. Add the egg, milk, vanilla, and orange marmalade. Mix until a dough forms and let rest for 10 minutes.
  2. Add sugar and salt to the dough and knead until absorbed; let rest again for another 10 minutes.
  3. Incorporate softened butter into the dough until smooth; cover and refrigerate for an hour.
  4. Roll out the chilled dough into a rectangle, spread softened butter over it, then fold it in sections to create layers.
  5. Chill wrapped dough again for one hour.
  6. Roll out into a larger rectangle and cut into triangles; roll each triangle up to form cornetti shapes.
  7. Brush with egg wash, sprinkle with sugar, let rise until doubled in size (30 minutes), then bake at 180°C for about 20 minutes until golden brown.
