Ingredients
- 250 g flour for yeast dough
- 110 g whole milk
- 1 egg
- 50 g sugar
- 1 pinch of salt
- 20 g butter
- 3 g dry yeast (or 9 g fresh yeast)
- 1 tablespoon orange marmalade
- 1 teaspoon vanilla extract
- 80 g butter (for finishing)
- Egg wash: 1 beaten egg with a tablespoon of cream or milk
- Granulated sugar (for sprinkling)
Instructions
- In a mixing bowl, combine flour and yeast. Add the egg, milk, vanilla, and orange marmalade. Mix until a dough forms and let rest for 10 minutes.
- Add sugar and salt to the dough and knead until absorbed; let rest again for another 10 minutes.
- Incorporate softened butter into the dough until smooth; cover and refrigerate for an hour.
- Roll out the chilled dough into a rectangle, spread softened butter over it, then fold it in sections to create layers.
- Chill wrapped dough again for one hour.
- Roll out into a larger rectangle and cut into triangles; roll each triangle up to form cornetti shapes.
- Brush with egg wash, sprinkle with sugar, let rise until doubled in size (30 minutes), then bake at 180°C for about 20 minutes until golden brown.
