- 1 cup non-dairy yogurt (plain and unsweetened)
- 2 tablespoons protein powder (optional)
- 1/4 cup cashew butter (or any nut/seed butter)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup (or honey)
- 1 1/2 cups chocolate chips
- 2 tablespoons coconut oil
Instructions
- In a mixing bowl, combine the non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup. Mix until smooth.
- Gently fold in the mini chocolate chips.
- Line a baking sheet with parchment paper. Scoop dollops of the mixture onto the sheet, spacing them apart.
- Freeze for at least 1 hour or until fully solid.
- Melt the chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth.
- Dip each frozen yogurt bite into the melted chocolate to coat thoroughly and return them to the baking sheet.
- Freeze again for another 30 minutes until chocolate hardens.
