Ingredients

  • 2 tablespoons protein powder (optional)
  • 1/4 cup cashew butter (or any nut/seed butter)
  • 1 teaspoon vanilla extract
  • 2 tablespoons maple syrup (or honey)
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a mixing bowl, combine the non-dairy yogurt, protein powder (if using), cashew butter, vanilla extract, and maple syrup. Mix until smooth.
  2. Gently fold in the mini chocolate chips.
  3. Line a baking sheet with parchment paper. Scoop dollops of the mixture onto the sheet, spacing them apart.
  4. Freeze for at least 1 hour or until fully solid.
  5. Melt the chocolate chips with coconut oil in a microwave-safe bowl or double boiler until smooth.
  6. Dip each frozen yogurt bite into the melted chocolate to coat thoroughly and return them to the baking sheet.
  7. Freeze again for another 30 minutes until chocolate hardens.
