  • 3 cups cooked white rice (or brown rice)
  • 2 cups shredded cooked chicken (or turkey)
  • 1 can cream of chicken soup (low-sodium or homemade)
  • 1 can French onion soup
  • 1 cup sour cream (dairy-free yogurt optional)
  • 1 cup shredded cheese (mozzarella or Swiss)
  • 1 cup French fried onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste black pepper
  • 1/4 cup chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked rice, shredded chicken, cream of chicken soup, French onion soup, sour cream, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Fold in half of the shredded cheese and half of the French fried onions.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Top with the remaining cheese and French fried onions.
  6. Bake for 35 minutes until bubbly and golden on top.
  7. Remove from the oven and garnish with chopped parsley before serving.
