  • 8.5 oz ricotta cheese
  • 8.8 oz fresh strawberries (hulled and diced)
  • demerara sugar for topping

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine self-raising flour, ground cinnamon, sugar, and salt.
  3. In another bowl, whisk together eggs, melted butter, vanilla extract, and milk until smooth; fold in ricotta cheese.

  5. Fill muffin tin cups two-thirds full and sprinkle demerara sugar on top.
