- 2 eggs
- 3 tbsp butter (melted and cooled)
- 1 tsp vanilla extract
- 1 cup milk
- 8.5 oz ricotta cheese
- 8.8 oz fresh strawberries (hulled and diced)
- demerara sugar for topping
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine self-raising flour, ground cinnamon, sugar, and salt.
- In another bowl, whisk together eggs, melted butter, vanilla extract, and milk until smooth; fold in ricotta cheese.
- Gently combine wet ingredients with dry ingredients until just mixed; carefully fold in diced strawberries.
- Fill muffin tin cups two-thirds full and sprinkle demerara sugar on top.
- Bake for about 20 minutes until golden brown; cool slightly before serving.
