  • Total Time: 55 minutes
  • Yield: Serves approximately 12 slices 1x

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 cup granulated sugar for filling
  • 2 tbsp cornstarch for filling
  • 2 tbsp water for filling
  • 8 oz semi-sweet chocolate, chopped for ganache
  • 1 cup heavy cream for ganache

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Pour in the milk, vegetable oil, eggs, and vanilla extract. Stir until combined. Gradually add boiling water while mixing to create a smooth batter.
  4. Divide the batter evenly among the prepared pans and bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
  5. Let the layers cool in their pans for 10 minutes before transferring them to a wire rack.
  6. For the strawberry filling, combine chopped strawberries with sugar, cornstarch, and water in a saucepan and cook over medium heat until thickened. Set aside to cool.
  7. For the ganache, heat heavy cream until just simmering. Pour over chopped chocolate in a bowl; let sit for a few minutes before stirring until smooth.
