Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar for filling
- 2 tbsp cornstarch for filling
- 2 tbsp water for filling
- 8 oz semi-sweet chocolate, chopped for ganache
- 1 cup heavy cream for ganache
Instructions
- Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
- In a large mixing bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Pour in the milk, vegetable oil, eggs, and vanilla extract. Stir until combined. Gradually add boiling water while mixing to create a smooth batter.
- Divide the batter evenly among the prepared pans and bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
- Let the layers cool in their pans for 10 minutes before transferring them to a wire rack.
- For the strawberry filling, combine chopped strawberries with sugar, cornstarch, and water in a saucepan and cook over medium heat until thickened. Set aside to cool.
- For the ganache, heat heavy cream until just simmering. Pour over chopped chocolate in a bowl; let sit for a few minutes before stirring until smooth.
