  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter (room temperature)
  • 1/2 cup Brown sugar (packed light or dark)
  • 1/4 cup White granulated sugar
  • 1/2 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1 cup Semi-sweet chocolate chips
  • 1 1/2 cup All-purpose flour (heat treated)
  • 1/4 tsp Salt
  • 1/2 cup Unsalted butter (room temperature)
  • 1/2 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 TBSP Milk
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Mini chocolate chips
  • 24 oz Cream cheese (room temperature)
  • 3/4 cup White granulated sugar
  • 1/2 cup Sour cream (room temperature)
  • 1/4 cup Heavy whipping cream (room temperature)
  • 1 tsp Pure vanilla extract
  • 3 Large eggs (room temperature)
  • 3/4 cup Mini chocolate chips
  • 2/3 Cookie dough balls
  • 1 cup Semi-sweet chocolate chips
  • 1/2 cup Heavy whipping cream
  • 1 cup Heavy whipping cream
  • 2 TBSP Powdered sugar
  • 1/2 tsp Pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the cookie crust ingredients until well combined. Press into the bottom of a greased springform pan and bake for about 10 minutes until golden.
  2. For the edible cookie dough, mix heat-treated flour, butter, sugars, vanilla extract, milk, and chocolate chips until smooth. Set aside.
  3. For the cheesecake filling, beat cream cheese until smooth. Gradually add sugar and mix in sour cream, heavy cream, vanilla extract, and eggs until fully combined. Gently fold in mini chocolate chips.
  4. Pour half of the cheesecake filling over the cooled crust. Drop spoonfuls of cookie dough over it and pour remaining filling on top. Finish with more cookie dough on top.
  5. Bake for 50-60 minutes until set but slightly jiggly in the center. Cool completely before chilling in the refrigerator for several hours.
  6. To serve, whip heavy cream with powdered sugar and drizzle melted chocolate ganache over each slice.
