- 1 can (15 oz) chickpeas, rinsed and drained
- 1/3 cup extra virgin olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons pure maple syrup
- 2 tablespoons red apple vinegar
- 1/2 lemon, juiced
- Salt and pepper to taste
Instructions
- In a large bowl, combine all salad ingredients.
- In a small bowl, whisk together olive oil, mustard, maple syrup, vinegar, lemon juice, salt, and pepper until emulsified.
- Pour the dressing over the salad mixture and toss gently until well-coated.
