- 2 cups all-purpose flour
- 3/4 cup granulated sugar

- 1 large egg, lightly beaten
- 3/4 cup milk
- 1/3 cup unsalted butter, melted
- 1 1/2 cups pitted cherries (fresh or frozen)
- 1/3 cup brown sugar
- 1/4 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 3 tablespoons unsalted butter, softened
Instructions
- Preheat the oven to 375°F (190°C) and prepare a muffin tin with paper liners or grease it.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In another bowl, mix the egg, milk, melted butter, and vanilla extract until smooth.
- Gently fold the wet mixture into the dry ingredients until just combined; then fold in the cherries.
- For the streusel topping, mix brown sugar, flour, ground cinnamon, and softened butter until crumbly.
- Fill muffin cups about three-quarters full with batter and sprinkle streusel on top.
- Bake for 20–25 minutes or until a toothpick comes out clean. Cool before serving.
