  • 1/3 cup unsalted butter, melted
  • 1 1/2 cups pitted cherries (fresh or frozen)
  • 1/3 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons unsalted butter, softened

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with paper liners or grease it.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix the egg, milk, melted butter, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; then fold in the cherries.
  5. For the streusel topping, mix brown sugar, flour, ground cinnamon, and softened butter until crumbly.
  6. Fill muffin cups about three-quarters full with batter and sprinkle streusel on top.
  7. Bake for 20–25 minutes or until a toothpick comes out clean. Cool before serving.
