- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream
- 2 teaspoons Cajun seasoning
- 3 tablespoons butter
- 10 oz. Rotel diced tomatoes with green chilies
- Olive oil
Instructions
- Pat chicken dry and season with Cajun seasoning; dredge in flour.
- Heat olive oil in a skillet over medium-high heat; cook the chicken until golden brown, about 6-7 minutes per side.
- Remove chicken and set aside. In the same skillet, melt butter and sauté minced garlic before adding flour to create a roux.
- Gradually whisk in chicken broth and heavy cream; stir in honey, hot sauce, remaining Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes.
- Return the chicken to the skillet along with diced tomatoes; top with cheese and cover until melted.
- Serve garnished with lime juice and cilantro over rice or your favorite side.
