Cajun Chicken is a flavorful, creamy dish that brings a taste of the South right to your kitchen. This easy-to-make recipe features tender chicken breasts coated in zesty Cajun spices and bathed in a rich cream sauce that’s perfect for soaking up with rice or crusty bread.

  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • 2 teaspoons Cajun seasoning
  • 3 tablespoons butter
  • 10 oz. Rotel diced tomatoes with green chilies
  • Olive oil

Instructions

  1. Pat chicken dry and season with Cajun seasoning; dredge in flour.
  2. Heat olive oil in a skillet over medium-high heat; cook the chicken until golden brown, about 6-7 minutes per side.
  3. Remove chicken and set aside. In the same skillet, melt butter and sauté minced garlic before adding flour to create a roux.
  4. Gradually whisk in chicken broth and heavy cream; stir in honey, hot sauce, remaining Cajun seasoning, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes.
  5. Return the chicken to the skillet along with diced tomatoes; top with cheese and cover until melted.
  6. Serve garnished with lime juice and cilantro over rice or your favorite side.
