- 8 Russet potatoes
- 2 pounds boneless, skinless chicken breasts
- ¼ cup buffalo sauce
- 2 tablespoons extra virgin olive oil
- 1 cup shredded mild cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 packet dry ranch seasoning mix
- 8-10 slices cooked turkey bacon
- Sour cream for serving
- Chopped green onions for serving
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- In a bowl, combine diced potatoes with olive oil, buffalo sauce, ranch seasoning, and black pepper; toss to coat.
- Spread seasoned potatoes on the prepared baking sheet and bake for about 40 minutes until golden brown.
- Season chicken with remaining buffalo sauce while the potatoes bake.
- In a separate bowl, mix cooked turkey bacon with shredded cheeses.
- Once the potatoes are done, layer them with marinated chicken and cheese mixture; return to oven for an additional 25-30 minutes until bubbly.
- Let cool slightly before serving; garnish with green onions and serve with sour cream and extra buffalo sauce.
