Ingredients
- 8 ounces cream cheese (softened)
- 2 teaspoons lemon juice
- 1/3 cup confectioners’ sugar
- 6 ounces raspberry preserves
- 8 slices brioche bread
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Unsalted butter (for cooking)
Instructions
- In a stand mixer, blend softened cream cheese with lemon juice, confectioners’ sugar, and vanilla extract until smooth.
- In a medium bowl, whisk together eggs, milk, vanilla extract, and cinnamon.
- Create pockets in each slice of brioche bread and fill them with the cream cheese mixture followed by raspberry preserves.
- Heat unsalted butter in a nonstick pan over medium heat. Dip each stuffed slice into the egg mixture before placing it in the pan.
- Cook each slice until golden brown on both sides.
- Serve warm topped with maple syrup, powdered sugar, and fresh raspberries.
