Ingredients
- 1 can lite coconut milk (13.5oz)
- 1/4 cup water
- 1 tsp vanilla extract
- 6 tbsp chia seeds
- 1 1/2 cup frozen blueberries
- 2 tbsp water
Instructions
- In a mixing bowl, combine one can of lite coconut milk, one teaspoon of vanilla extract, 1/4 cup water, and six tablespoons of chia seeds. Stir until well mixed.
- Refrigerate the mixture for at least 6 hours or overnight to allow it to thicken.
- For the blueberry sauce, heat 1 ½ cups of frozen blueberries with two tablespoons of water in a saucepan over medium heat until the blueberries burst. Mash them until smooth and simmer for 10 minutes.
- Once cooled, layer the chia pudding with blueberry sauce in jars for serving.
