  • 1/2 cup 2% milk
  • 1/2 cup canola oil (or vegetable/coconut oil)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh blueberries
  • 1/3 cup granulated sugar (for streusel)
  • 1/3 cup all-purpose flour (for streusel)
  • 3 tablespoons softened butter (for streusel)

Instructions

  1. Preheat your oven to 350ºF. Grease and flour a 9″x5″ loaf pan.
  2. In a medium bowl, whisk together the granulated sugar, milk, canola oil, egg, and vanilla extract until smooth.
  3. In another bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  4. Gently fold in the fresh blueberries and pour the batter into the prepared loaf pan.
  5. For the streusel topping, mix together granulated sugar, flour, and softened butter until crumbly; sprinkle over the batter.
  6. Bake for about 55–60 minutes or until a toothpick comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
