- 3/4 cup granulated sugar
- 1/2 cup 2% milk
- 1/2 cup canola oil (or vegetable/coconut oil)
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups fresh blueberries
- 1/3 cup granulated sugar (for streusel)
- 1/3 cup all-purpose flour (for streusel)
- 3 tablespoons softened butter (for streusel)
Instructions
- Preheat your oven to 350ºF. Grease and flour a 9″x5″ loaf pan.
- In a medium bowl, whisk together the granulated sugar, milk, canola oil, egg, and vanilla extract until smooth.
- In another bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Gently fold in the fresh blueberries and pour the batter into the prepared loaf pan.
- For the streusel topping, mix together granulated sugar, flour, and softened butter until crumbly; sprinkle over the batter.
- Bake for about 55–60 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack.
