Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1 large egg
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- Zest of 1 large lemon (about 1 tbsp)
- 1/2 tsp baking powder
- Pinch of salt
- 3/4 cup fresh or frozen blueberries (do not thaw)
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- Blend cottage cheese, oats, egg, honey/maple syrup, vanilla extract, lemon zest, baking powder, and salt until smooth.
- Gently fold in blueberries.
- Allow batter to rest for 5 minutes.
- Fill muffin cups about three-quarters full with batter.
- Bake for 18-22 minutes until lightly golden and firm to touch.
- Cool in pan for a few minutes before transferring to a wire rack.
