- 2 1/2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 1 cup unsalted butter, room temperature
- 3 large eggs, room temperature
- 1 cup buttermilk, room temperature
- 1 1/2 cups fresh blackberries
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pure vanilla extract
- 1 teaspoon lemon zest (optional)
- Purple food coloring, a few drops (optional)
- 1 cup unsalted butter, room temperature (for frosting)
- 3 1/2 cups powdered sugar (for frosting)
- 1 cup fresh blackberries (reduced to 1/3 cup puree for frosting)
- 4 ounces cream cheese, room temperature (for frosting)
- 1 teaspoon pure vanilla extract (for frosting)
- Pinch of salt (for frosting)
- Extra fresh blackberries (for decoration)
- Edible flowers (optional for decoration)
- Fresh mint leaves (optional for decoration)
Instructions
- 1. Preheat your oven to 350°F (175°C) and grease two round baking pans.
- 2. In a mixing bowl, combine all-purpose flour, baking powder, baking soda, and salt. Whisk together until well blended.
- 3. In another bowl, beat unsalted butter and granulated sugar together until light and fluffy, about 3 minutes using an electric mixer on medium speed.
- 4. Add eggs one at a time into the butter mixture while mixing on low speed. Then mix in pure vanilla extract until well combined.
- 5. Gradually alternate adding the dry ingredients and buttermilk to your wet mixture, starting with dry ingredients until everything is mixed well.
- 6. Gently fold in fresh blackberries into your batter until evenly distributed without breaking them too much.
- 7. Divide batter evenly between prepared pans and bake for about 32 minutes or until a toothpick inserted comes out clean.
- 8. Once baked, remove from oven and let cool in pans for about 10 minutes before transferring them onto a cooling rack to cool completely.
- 9. In a bowl, mix softened cream cheese with unsalted butter until creamy. Gradually add powdered sugar while mixing on low speed until smooth. Then mix in blackberry puree and vanilla extract along with a pinch of salt.
- 10. Once cooled, place one layer on a serving plate. Spread frosting over it evenly then place the second layer on top. Frost the top and sides with remaining frosting.
- 11. Top your beautifully frosted cake with extra fresh blackberries, edible flowers, or mint leaves if desired.
