  • 1 cup buttermilk, room temperature
  • 1 1/2 cups fresh blackberries
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon lemon zest (optional)
  • Purple food coloring, a few drops (optional)
  • 1 cup unsalted butter, room temperature (for frosting)
  • 3 1/2 cups powdered sugar (for frosting)
  • 1 cup fresh blackberries (reduced to 1/3 cup puree for frosting)
  • 4 ounces cream cheese, room temperature (for frosting)
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra fresh blackberries (for decoration)
  • Edible flowers (optional for decoration)
  • Fresh mint leaves (optional for decoration)

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease two round baking pans.
  2. 2. In a mixing bowl, combine all-purpose flour, baking powder, baking soda, and salt. Whisk together until well blended.
  3. 3. In another bowl, beat unsalted butter and granulated sugar together until light and fluffy, about 3 minutes using an electric mixer on medium speed.
  4. 4. Add eggs one at a time into the butter mixture while mixing on low speed. Then mix in pure vanilla extract until well combined.
  5. 5. Gradually alternate adding the dry ingredients and buttermilk to your wet mixture, starting with dry ingredients until everything is mixed well.
  6. 6. Gently fold in fresh blackberries into your batter until evenly distributed without breaking them too much.
  7. 7. Divide batter evenly between prepared pans and bake for about 32 minutes or until a toothpick inserted comes out clean.
  8. 8. Once baked, remove from oven and let cool in pans for about 10 minutes before transferring them onto a cooling rack to cool completely.
  9. 9. In a bowl, mix softened cream cheese with unsalted butter until creamy. Gradually add powdered sugar while mixing on low speed until smooth. Then mix in blackberry puree and vanilla extract along with a pinch of salt.
  10. 10. Once cooled, place one layer on a serving plate. Spread frosting over it evenly then place the second layer on top. Frost the top and sides with remaining frosting.
