Instructions

- In another bowl, cream together the butter and sugars until light and fluffy.
- Beat in the egg until combined.
- Fold in the shredded zucchini, shredded carrot, and chopped pecans.
- Gradually mix in the dry ingredients until just combined; do not overmix.
- Drop spoonfuls of dough onto a baking sheet and bake for about 13 minutes or until edges are golden brown.
