- 1 lb boneless chicken
- 1/2 cup frozen peas
- 1/2 cup diced bell peppers
- 2 green onions
- 2 cups cooked jasmine rice
- 2 tbsp vegetable oil
- 2 cloves garlic (minced)
- 1 tbsp ginger (minced)
- 3 tbsp soy sauce
- 2 tbsp sweet chili sauce
Instructions
- Gather all ingredients and prep them by cutting the chicken into bite-sized pieces and dicing the bell peppers.
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Sear the chicken for about 5-7 minutes until golden brown; then remove and set aside.
- In the same pan, quickly sauté garlic and ginger until fragrant, about 30 seconds.
- Add bell peppers and peas; stir-fry for 2-3 minutes until tender-crisp.
- Stir in the cooked rice, soy sauce, and sweet chili sauce; mix well to combine all ingredients.
