- 2 cups cooked shredded chicken
- 1 1/3 cup refried beans
- 1 1/3 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 6-8 large taco-sized flour tortillas
- 2-3 jalapeños (diced)
Instructions
- Preheat oven to 400°F.
- In a mixing bowl, combine chicken, refried beans, salsa, cheese, and jalapeños.
- Place filling in the center of each tortilla and roll tightly.
- Arrange chimichangas seam-side down on a baking sheet and brush with melted butter.
- Bake for 15 minutes, flip gently, then bake for another 10 minutes until golden brown.
- Allow cooling for 5–10 minutes before serving.
