- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/4 cup (50g) brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups (180g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 medium apple, peeled and finely diced
- 2 tbsp (25g) granulated sugar
- 1 tsp ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually mix the dry ingredients into the wet ingredients until just combined.
- Fold in finely diced apples gently using a rubber spatula.
- Spread the batter evenly into the prepared baking pan.
- Combine granulated sugar and cinnamon in a small bowl; sprinkle over the batter.
- Bake for 25–30 minutes until golden brown; a toothpick should come out clean when inserted in the center.
- Let cool before cutting into squares.
