  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat oven to 350°F (180°C) and grease a 9 x 4 inch baking tin lined with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In another bowl, beat butter and granulated sugar until fluffy. Add eggs one at a time; mix in vanilla.
  4. Gradually fold in dry ingredients, alternating with buttermilk until just combined.
  5. Toss diced apples with brown sugar and cinnamon; layer half of the batter in the tin, followed by half of the apple mixture. Add remaining batter and top with remaining apples.
  6. Bake for about 55-65 minutes or until a toothpick comes out clean. Cool before slicing.
