  • 1 1/2 cups granulated sugar
  • 12 large egg whites (room temperature)
  • 1 1/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Fresh strawberries, sliced (for serving)
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 325°F and position the rack in the lower middle.
  2. In a mixing bowl, beat egg whites until foamy. Add cream of tartar, vanilla extract, and beat until soft peaks form (about 5-6 minutes).
  3. Sift together cake flour, granulated sugar, and salt five times.
  4. Gently fold the flour mixture into the egg whites one-third at a time. Pour batter into an ungreased tube pan.
  5. Bake for 40 to 45 minutes until golden brown.
  6. Cool the cake upside down in the pan for two hours before removing.
  7. Slice the cooled cake horizontally in half, layer with whipped cream and sliced strawberries, then top with more cream and berries.
