- 1 cup cake flour
- 1 1/2 cups granulated sugar
- 12 large egg whites (room temperature)
- 1 1/2 teaspoons cream of tartar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Fresh strawberries, sliced (for serving)
- Whipped cream (for serving)
Instructions
- Preheat your oven to 325°F and position the rack in the lower middle.
- In a mixing bowl, beat egg whites until foamy. Add cream of tartar, vanilla extract, and beat until soft peaks form (about 5-6 minutes).
- Sift together cake flour, granulated sugar, and salt five times.
- Gently fold the flour mixture into the egg whites one-third at a time. Pour batter into an ungreased tube pan.
- Bake for 40 to 45 minutes until golden brown.
- Cool the cake upside down in the pan for two hours before removing.
- Slice the cooled cake horizontally in half, layer with whipped cream and sliced strawberries, then top with more cream and berries.
