- 3/4 cup almond flour
- 1 cup white chocolate chips (dairy-free as needed)
- 2 tsp coconut oil (or your preferred oil)
Instructions
- Prepare the Cracker Base: In a food processor, finely crush the graham cracker sheets until powdery.
- Mix in Strawberries: Add diced strawberries to the crushed crackers and pulse until combined, leaving small pieces for texture.
- Combine with Almond Flour: Mix in almond flour until fully incorporated.
- Form into Bites: Scoop mixture onto wax paper or a lined cookie sheet to form about 16 balls. Freeze for 20-30 minutes.
- Melt Chocolate Coating: In a microwave-safe bowl, combine white chocolate chips and coconut oil. Heat in intervals until melted and smooth.
- Dip Each Bite: Dip each frozen ball into the melted chocolate coating and return to the sheet. Optionally sprinkle with crushed crackers for added crunch.
- Final Freeze: Freeze again for an additional 5 minutes before serving.
