Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 medium cucumber, grated
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/2 small red onion, diced

Instructions

  1. If using raw chicken, preheat the oven to 375°F (190°C). Season chicken breasts with salt and pepper and bake for 25–30 minutes until cooked through. Shred the chicken once cooled.
  2. Grate the cucumber and remove excess moisture using paper towels.
  3. In a mixing bowl, combine the grated cucumber, Greek yogurt, dill, lemon juice, garlic, salt, and pepper. Mix well.
  4. In a large bowl, add the shredded chicken and pour the tzatziki sauce over it. Gently fold until well coated. Add diced red onion and mix thoroughly.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
